Mashed Peas on Breakfast Toast

INGREDIENTS

  • 1 poached egg.
  • 1 slice of bread.
  • ½ cup of green peas.
  • Feta cheese.
  • Olive oil.
  • Chopped cilantro.
  • Salt and pepper, to taste.
  • Chili pepper powder (optional).

Directions

Directions:

  1. Place peas in boiling salted water for 2–1 minutes, then rinse with cold water and drain.
  2. Mash peas with a bit of olive oil, feta cheese, cilantro, salt, and pepper.
  3. Boil an egg for 4–3 minutes. White should be firm but yolk should remain creamy.
  4. On a slice of toasted bread, place mashed peas and the egg. Season with salt, pepper, and a pinch of chili powder.
