MOLKHIA MEAL WITH YOUR CHOICE OF PROTEIN

MOLOKHIA WITH CHICKEN, SHRIMP, OR MEAT

INGREDIENTS

  • 1 KG of either chicken parts, shrimps, or meat.
  • 1 Pack of Molokhia.
  • 4 tablespoons of vegetable oil.
  • 1 onion.
  • 1 cinnamon stick.
  • 5 cardamom pods.
  • 1 ½ - 2 liters of water, boiling.
  • 5 cloves of minced garlic.
  • 4 tablespoons of lemon juice.
  • 3 tablespoons of freshly chopped coriander.sa
  • 2 ½ cups of white rice, washed and drained.
  • 2 tablespoons of ghee.
  • 1 teaspoon of salt.
  • 5 cups of hot water.
  • 1 chopped onion.
  • 1 teaspoon of sumac.
  • 2 tablespoons of lemon juice.
  • ½ teaspoon of salt.

Directions

  1. Heat the vegetable oil over medium heat and lightly brown the chicken, shrimp, or meat pieces on both sides.
  2. Add a whole onion, cardamom, and cinnamon to the pot.
  3. Add boiling water, let it boil for a minute.
  4. Skim off any foam and fat that forms a top to keep the liquid clear.
  5. Keep boiling for 20 minutes.
  6. Remove the cinnamon stick and cardamom pods then add the frozen Molokhia to your choice of protein and let it simmer for 30 more minutes.
  7. A few minutes before it is ready, add the garlic, lemon juice, coriander and salt and keep cooking for 3-4 minutes.
  8. Scoop Molokhia into a big serving bowl and serve hot with rice and onion sumac mix.
