Artichokes Recipe

Italian Artichoke salad

INGREDIENTS

  • 1 teaspoon of extra virgin olive oil.
  • ½ lemon juice.
  • 1 large, pressed garlic clove.
  • 1/3 teaspoon of fine salt.
  • 170 grams of grilled artichokes in oil, cut into wedges.
  • 1 can (425 grams) cannellini beans or great northern beans.
  • 80-90 grams of salad leaves.
  • 2 teaspoons of shaved parmesan.
  • Black pepper, to taste.

Directions

  1. Create the lemon garlic dressing, place olive oil, lemon juice, salt, garlic and pinch of pepper in a jar.
  2. Place artichoke wedges and beans into a bowl, add half of lemon garlic dressing and stir well to combine.
  3. Arrange the salad leaves on a large serving plate and top with artichokes and the beans.
  4. Trickle over with the remaining lemon garlic dressing and finish with shaved parmesan and freshly ground black pepper.
