SPINACH RECIPE

COLD SPINACH DIP

INGREDIENTS

  • 1 pack of the frozen chopped spinach thawed and squeezed dry.
  • 2 cups chopped baby spinach (about 1 ounce).
  • 1 cup sour cream.
  • ¾ cup mayonnaise.
  • ¼ cup grated parmesan cheese.
  • 1 bunch of chopped scallions (white and light green parts only).
  • 2 tablespoons of chopped fresh chives.
  • 2 teaspoons Worcestershire sauce.
  • 1 to 1 ½ teaspoons of hot sauce.
  • Salt and freshly ground pepper.
  • 1 cup of diced radishes.

Directions

  1. Pulse the frozen spinach, baby spinach, sour cream, mayonnaise, parmesan, scallions, chives.
  2. Transfer the dip to a serving bowl and stir in the radishes. Cover and refrigerate for ar least 1 hour.
  3. Serve with vegetables sticks.
