CORN ON THE COB

INGREDIENTS

  • 10-2-ounce bags of steam frozen corn.
  • 1 tablespoon of olive oil.
  • Juice from one lime about 2 tablespoons.
  • ½ cup of plain Greek yogurt.
  • 4 ounces of low-fat feta cheese.
  • 1 chopped jalapeno pepper (leave the seeds in for extra spice).
  • 2 tablespoons of chopped red onion.
  • 2 cloves of minced garlic.
  • ½ cup of fresh chopped cilantro.
  • 2 tablespoons of franks red-hot sauce or your favorite wing sauce.

Directions

  1. Prepare corn according to package instructions.
  2. 10-2-ounce bags steam fresh frozen corn.
  3. Once the corn is steamed, heat in a large skillet on medium high heat with olive oil.
  4. 1 tablespoon of olive oil.
  5. Take corn off heat and toss with all other ingredients, juice from one lime, ½ cup of plain Greek yogurt, 4 ounces of low-fat feta cheese, 1 jalapeno pepper, 2 tablespoons of red onion, 2 cloves of garlic, ½ cup of fresh cilantro, 2 tablespoons of red-hot sauce.
  6. Serve as a side dish or as a dip with tortilla chips!
  7. Serve immediately and refrigerate the remainder for up to 3-5 days.
