MOLOKHIA WITH TAKLIA RECIPE

INGREDIENTS

  • ½ large chicken (or 1 small about 750 grams).
  • 1 Medium quartered onion.
  • 12 pods of green cardamom.
  • 1 cinnamon stick.
  • 1 bay leaf.
  • 1 teaspoon of salt.
  • 5 cups of water.
  • 2 tablespoons of extra virgin olive.
  • 6 medium cloves of garlic.
  • 1 tablespoon of ground coriander seeds.
  • ½ teaspoon of salt.
  • 500 grams of Molokhia.
  • 2 cups of rice.
  • 2 tablespoons of ghee (clarified butter).
  • 1 teaspoon of lemon juice.

Directions

  1. Add the chicken onions, cardamom, cinnamon, bay leaf salt and water into a pot. Cover and bring to boil, then remove the lid and skim off any scum that accumulates on the surface.
  2. Cook the chicken for 20 minutes.
  3. To make the Taklia, combine the garlic, coriander and olive oil and salt and mash together into a paste.
  4. Prepare the Molokhia, by removing the leaves from the stems.
  5. When the chicken is done, transfer it to a bowl and cover it with plastic wrap.
